Debbie's Carrot Cake
2 cups of sugar
2 cups of flour
2 teaspoons of baking soad
1 teaspoon of salt
2 teaspoons of cinnamon
1 cup of oil
4 eggs
3 cups of grated carrots
3/4 cup of nuts
3/4 cup of raisins
ICING
2 cups of sugar
1/4 cup of margarine
1 teaspoon of vanilla
4 teaspoons of milk or water
350- 40 min

by the way I have a friend here called Paul Ighani from Costa Rica.. he says he brother was working at TIS possibly still when you arrived... any idea??
I think it may be Jason. He was a YOS the year before I came and then I met him the last few weeks in June when he came to serve for a bit again. ....
